Easy Recipe: Spicy Couscous

Hi Guys!

I'm not a Chef and neither do I throw down in the Kitchen. I just like discovering new recipes and when I find something I like, I cook it with all my heart.

I recently became #TeamFitFam, reducing my carb dependency and incorporating healthier alternatives like whole wheat and things into my diet. Couscous is a staple I had never tried before now, I have no idea why. The kind I bought is the Israeli Couscous, also known as the Pearl Couscous. It's a bit fatter and firmer than the usual so it has to be cooked as opposed to the regular kind which can be soaked in boiling water for some minutes.

Rice Select Whole Wheat Pearl Couscous - N660 @ Grandsquare supermarkets, VI

Clockwise: Yellow Pepper, Green Pepper, Red Pepper, Garlic Cloves, an Onion.

Couscous, Sweet Corn and Frankfurter

All ingredients diced, except the couscous of course :)
I used a handful of sweet corn, 2 balls of red pepper, 1/4 yellow pepper, 1/2 onion bulb, 1/2 green pepper, 3 garlic sticks and 1/2 frankfurters diced.

Fried for a few minutes with a pinch of salt and lemon pepper to taste.

While frying up the ingredients, I boiled my couscous (5 handfulls) for about 10mins, poured it into the veggies and mixed well. I left it on the heat for 3 mins and my meal was ready.

Food is ready :)

This serves 3 people and is perfect for days when you're on the go and need to cook healthy in the shortest time possible. Plus it is sooooo yum!

Let me know if you try it.

  1. This looks absolutely delicious and I love the fact that the couscous is fatter than the average one!! I have to try this!!!...xx

    1. Yaayyy...please try it and post pictures. Would love to see :)

  2. Be honest, what's the texture of this couscous like cus I have tried different brands and they all feel weird. For a rice lover, is it easy to adapt to?? Lol

    1. Lol...I'm not sure of the best way to describe the texture to you...pearl couscous is fatter than the regular couscous. It feels like tiny round balls, while rice is longer and slimmer. I'm not really a rice lover, I just eat it 'cause it's food, so adapting to this was pretty easy for me. I think you can too, after a few spoons you'll be fine. Better yet, try it and see, you just might like it :)

      Hope this helped.

  3. Am so trying this...looks Yummy.
