Oatmeal Pancakes
Hiya!
Still on the healthy eating journey and making the most of oats, I decided to make a healthier version of pancakes by replacing white flour with oatmeal flour (blending oats to a fine texture). You'll be amazed how easy it is to turn a normally sinfully unhealthy meal into a healthy and still tasty one.
Oatmeal Pancakes
Ingredients: * Oats
* Honey/Brown Sugar to taste
* Milk (Skimmed, Soya or Almond)
* Egg
* Fruit
* 1 teaspoon Baking Soda
* Cooking Spray or Olive Oil
1. Blend all the ingredients together until the mixture is smooth. You can add fruits (e.g., banana) in at this point if you want.
2. In a pan, spray a little cooking spray or olive oil and place the mixture on the surface of the pan to fry.
3. When it starts to bubble, turn over to the other side for a few minutes until both sides are golden brown.
4. Place in a warm oven to retain heat.
5. Put fruits of choice in a bowl (I used grapes).
6. Put honey in a pot and bring to a boil. Pour the honey over the fruits and leave to sit for 2 minutes.
7. Pour over the pancakes and serve.
Now you don't have to feel bad about eating Pancakes :)
